Cibo Verde came out of the need to harmonize food and fitness for celebrities in Hollywood.

Scott Camilli put his chef hat on young, with culinary arts training at the famed Arcata High School. He went on to graduate with top honors from California School of Culinary Arts Le Cordon Bleu.
Scott has had a special relationship with Williams Sonoma as an instructor and is featured at in-store events. He is constantly in demand as a private chef for many celebrities in Hollywood, as his low calorie and high taste menus keep stars fit.
Scott creates an incredible balance of tasty gourmet food while significantly reducing calories. He purposefully seeks out and replaces many empty calories in grains, sugar and processed foods for natural substitutes that are organic, healthy and delicious. The result is amazing tasting food, with low calorie counts. It will make you lose weight while enjoying what you eat and never feeling hungry!
Growing up in Italy, Paolo never knew what processed foods were. His meals were made fresh, most of the ingredients coming from his family’s own farm. “It was part of our culture. We made our own tomato sauce, our own wine, we had preserves and homegrown vegetables. My mother baked the bread and made the pasta.”
For him, eating fresh, organic food was a way of life and kept him healthy and looking good. After working as a model in Milan and then Miami, he noticed why Americans struggle with with their fitness. “The foods are so processed in the States, and the portion sizes are just insane.” He later moved to LA and began working as a trainer but noticed no matter what he did to workout his clients, he wasn’t impacting their overall health and in some cases, not getting them to lose weight. “I didn’t have control over what kind of food they were eating when they left the gym and I really believe food is about 70% of your health, training is about 30%.”
He had the idea to start a business where he could bring his clients personally designed meals and keep them on the plan by making them delicious and easily accessible. He teamed with chef Scott Camilli, who he met through a mutual friend, and Cibo Verde was born, bringing a fresh new concept the the idea of home-delivered meal plans.
